View Full Version : Crock Pot Taco Soup (WW approved!)

2 cans stewed tomatoes
1 can whole kernel corn
1 packet hidden valley ranch seasoning
1 packet taco seasoning
1 package morningstar crumbles (or generic soy crumbles)
OR
1lb ground beef, cooked
Throw everything in crockpot (do not drain anything), add 1 can water.
Mix well.
Cook on low for however many hours you want - at least 6 :)
As far as weight watchers, if you use the morning star crumbles, 1.5 cups is 1 point. If you use ground beef, it's 3.
We like to top it with a little bit of sour cream and some shredded cheese. Increases the points value just a bit but it's super good :yes

oh I would so eat that Becca. Thanks for sharing the recipe. I am gonna have to tell my hubby and print this recipe out. I am always looking for some new recipe for variety so we dont keep having the same stuff for dinner. LOL

Becca, we have 2 bags of black beans I want to use up. Your ingredients say 2 cans...do you know how many oz or cups that would be? Like maybe around 32 oz or something? Thanks!

I've had this, it's GOOD - except when all is said and done if you put some crumbled fritos on top - it's even better ;)

This would be a problem. Dry beans need to be soaked overnight before you can use them :( One can of beans is about 2 cups or so - so if you used 4C of beans it should work just fine. You just can't throw dry beans in the crock pot, because it won't be happenin'. :(
Look on the back of the bag though, there may be a way to expedite the soaking and do it quicker than overnight. You can cook the soup on high for 4 hours if need be, I just like to do it longer and on low because the longer the flavors mingle the better it tastes. It tastes even better as leftovers than it does the first go-round. :)

Yeah it has different ways to use them: long soak and cooking, so looks like if I just cook them for an hour, they'll be ok!

I know you'll love the soup :yes It makes alot and like I said, the leftovers are even better.
I think I screwed it up :( For some reason it looks like a ton of stuff but little meat? It smells really good, but there's just not much meat. I did a taste test earlier even though it's not all the way done and it tasted good, but I think I just effed it up a bit :lol
mmm, even if i did put too much of something, it tastes REALLy good!! I put some cheese & sour cream on it :thumbsup

:lol Ok good...I couldn't put all of the beans in the crockpot b/c it was almost overflowing. I accidently put an extra can of corn in :lol Oh well, still very good!
