In case anyone is interested! He liked it better than the packet (I could take it or leave it), so thought I'd share it :)
1 tbs veg. oil
1 onion, minced
3 garlic cloves, minced (I just used minced garlic seasoning)
2 tbs chili powder
1 tsp cumin
1 tsp coriander (dry)
1/2 tsp oregano
1/4 tsp cayenne pepper
salt
1 lb ground beef
1/2 c. smooth canned tomatoe sauce
1/2 c. chicken broth
2 tsp cider vinegar
1 tsp brown sugar
1. Heat oil in a skillet over medium heat until shimmering. Add onion and cook until softened. Stir in the garlic, spices, and 1 tsp salt and cook until fragrant, about 30 sec.
2. Stir in ground beef, break it up, and cook until no longer pink. Stir in tomatoe sauce, broth, vinegar, & sugar and simmer until thickened. Season w/ salt to taste.
(they also have a recipe for making your own taco shells and those shells look just like authentic ones so better taste, so if you are interested, I'll put that! Basically just using corn tortillas)
