The recipe for homemade Mac N cheese .. :P I've been wanting to make some of it and I always see you making yours so .... can I borrow it ...?? :D

I don't measure everything out so I'm going to have to guessimate the best that I can. I'll make it again this week some time and try to write down a better estimate. I normally just add things until it looks like the right consistancy/texture.

8 tbsp butter
1/4 cup flour (maybe just a SMIDGE more)
6 cup of milk
1/2 block (the big block) of velveeta cheese in small cubes
12 oz of elbow noodles
2 cups shredded sharp cheddar
1/2 tsp or so of salt.
some fresh pepper


Preheat oven to 350.
Cook your noodles in one pan while melting butter in another LARGE pan. When butter is melted, add your flour and keep stiring or wisking while it cooks for about 2-3 minutes. Make sure heat is not too high so it doesn't burn. Start gradually adding your milk while constantly stiring or wisking. Bring it up to a boil for about a minute, then back the heat down to about medium low. Start adding your cheese while still stiring. Once your cheese is completely melted, you'll wanna pour your noodles in a large lightly greased pan, then pour your cheese sauce over the top. Stir it up really good while mixing in your salt and pepper (it will be kinda soupy but will cook down a lot when you bake it), then top with your cheddar cheese. Bake in preheated oven for about 30 minutes or so.


Like I said, that is a guesstimate but I will try to make it again and monitor actual amounts. That looks about right though and you really need to tailor it to your own likes. Some people like it thicker or cheesier and some people like it thinner and more creamy. So, you adjust to that. :)
