View Full Version : Creamy Chicken Enchiladas

These were really good
(I used more sour cream and cheese then what it called for)

2 1/2 cup chopped cooked chicken
1 can of cream of chicken soup
1 cup of sour cream, divided
8 ounces shredded cheese, divided
12 tortillas
1 1/2 cup salsa
Preheat oven to 350 degrees
Mix chicken, soup, 1/2 cup of sour cream, and 1 cup of shredded cheese until well blended
Spoon about 1/4 cup of the chicken mixture down center of tortilla, roll up
Place seam down in greased 13 x 9 pan
Top with salsa and cheese
Bake 25 minutes
Top with remaining sour cream

Oh it says 12 tortillas, I only fit six in the pan....

well we dont need to eat 12 lol. i think we might be able to adapt this to our low carb diet too. i have to check the soup though. but we use low carb tortillas but it is still good.

I think Campbells makes reduced fat soup, not sure, you'd have to check it out

oh no its not the fat thats the problem its the carbs we are watching.

sounds good, I make enchiladas very similar to that! :)
