View Full Version : Apple Cranberry Crisp (from Cooking Light)

I'm trying this tonight, but I am using frozen cranberries because I have no fresh ones. :shrug We'll see how it goes!

Ingredients

3 cups cubed Granny Smith apple (about 1 pound)
2 cups fresh cranberries
1/2 cup sugar
Cooking spray
1/3 cup whole wheat flour
1 cup regular oats
1/2 cup packed brown sugar
1/4 cup canola oil
Preparation
Preheat oven to 350°.

Combine the first 3 ingredients in a medium bowl; spoon into an 8 x 8-inch baking dish coated with cooking spray. Lightly spoon the flour into a dry measuring cup, and level with a knife. Combine flour, oats, sugar, and oil, stirring with a fork until crumbly. Sprinkle over the apple mixture. Bake at 350° for 40 minutes or until bubbly.
Yield

10 servings (serving size: 1/2 cup)

Got it all written down.. gotta love being out of printer ink inbetween paydays!

Go to Costco to refill your ink cartridge. It cost me $8 to fill my black one. ;)
I usually save all my recipes to a file on my comp and then move them over to a disk once a year. :giggle After I try them and see if I like them.

DH wants a new printer.. LOL.. so what better time than when you're out of ink right??? I doubt it will happen.

Walgreen's does ink cartridges too!

okay, I am making this now, but I forgot I was out of canola oil, so I used Gwen's vegan butter. We shall see in approx. one hour.
