View Full Version : Breakfast in Bed Casserole
CoffeeGirl 10-27-2007, 02:03 PM 1 bag (32 oz.) frozen hashbrown potatos
1 lb bacon, cut into pieces, fried and drained.
1/2 c diced onions
1 green pepper, diced
3/4 lb cheddar cheese diced
1 dozen eggs
1 c milk
1/2 tsp dry mustard
salt & pepper to taste
Layer the hashbrowns, bacon, onions, green pepper and cheese in a slow cooker, layered. Add the cheese. Beat eggs, milk and mustard, salt & pepper together; pour over mixture and cook on Low for 10 hours. Serves 8.

It's in the crockpot right now. I decided that the hashbrowns needed to be seasoned before I put them in (I'm all about food having BIG flavor!) so I put them in a bowl and tossed in a bit of cayenne pepper (just a little sprinkle) and Italian Seasoning.
Now I am going to prep my pork loin for tomorrow. I have a VERY busy day tomorrow, so I want to get it all done tonight. :P

Yeah, 8 may have been better, but there just wasn't enough real liquid ( The eggs aren't really a liquid) to not dry out the potatoes also. Well, maybe we can find another recipe for lazy breakfast! :P

Use your imagination when making this recipe. Try Canadian bacon instead of ham. Use Havarti or Swiss cheese instead of Cheddar. Add some minced jalapeno peppers if you like hot foods. Then enjoy!
INGREDIENTS:
32 oz. bag frozen hash brown potatoes
1 lb. cooked ham, cubed
1 onion, chopped
1 green bell pepper, chopped
1 Tbsp. olive oil
1-1/2 cups shredded Cheddar cheese
12 eggs
1 cup whole milk
1/2 tsp. salt
1/2 tsp. pepper
PREPARATION:
Spray inside of slow cooker with nonstick cooking spray. In small skillet, cook onion and green pepper in olive oil until crisp tender. Let cool about 10 minutes. Place one third of the frozen hash brown potatoes in the slow cooker.
Add one third of the ham, onion, green pepper and cheese. Repeat layers, ending with the cheese.
In a large bowl, beat the eggs, milk and seasonings until well mixed. Pour over the ingredients in the slow cooker, cover and turn on low. Cook for 10-12 hours, until casserole is set and eggs are thoroughly cooked. Serves 12

It's rare that I follow a recipe. :lmao I always tweak them.
VinnysGirl 10-28-2007, 12:08 PM Hmmm.... Maybe if you added a can of cream of potato soup to the mix for extra moisture. It would probably cream it up because I'm sure between the eggs and the hash browns the moisture is sucked out of it. I'll keep the 8 hours in mind!!!

Yes, season the eggs w/ a bit of S&P (+the dry mustard it calls for) and it you are going to mix the cream of potato with the hashbrowns then I would season them (like I did with the cayenne and italian seasonings, but add what you want.) .
Also, the middle of the eggs in the crockpot were fine. I think lower the cook time to 8 hours and trying the cream of potato would help. Maybe a little bit of water or milk in the eggs, just careful not to overdo it, kwim? Or you might get Breakfast soup. :pukey

It all blended together really well for being layered, so I don't think that was the problem. I really do think it was the cooking time.

K! I'll keep all of that in mind. I think just a little extra moisture and shorter cook time will make all the difference in the world though. My crockpot is smaller than most peoples as well so I'm going to half the recipe. Of course Vinny and I don't need servings for 8! LOL!! I'll cut it to 4 and see what I can come up with. I'll definitely shorted the cook time though. It'll probably be closer to 7 hours for us.
HEIDI 10-28-2007, 12:59 PM Tried it as well. A little dry, but good. I think 10 hours is too long. I woke up at 5 after it being on for about 7 hours and it looked good & pretty moist.
