Ingredients:
3 tbsp. oil
2 lbs. stew meat
1/2 cup chopped green pepper
1 cup diced potatoes
1 cup sliced carrots
1/2 cup chopped celery 1 cup cliced onion
1/2 tsp. salt
1 lg. clove garlic
1/8 tsp. pepper
1 small can mushrooms
1 8 oz. can tomatoes
3 cups beef stock
3 tbsp. cornstarch
1/3 c. barbecue sauce
1/4 c. cold water
Directions:
1. Saute onion, pepper and garlic in oil. Add salt, pepper, barbecue sauce, tomatoes, potatoes, carrots, celery, beef stock,
and mushrooms.
2. Add the stew meat to the crock pot, cover with mixture. Cook on low for 8-10 hours.
3. Mix cornstarch and cold water, add to crock pot to thicken before serving.
