:woot It ROCKED! The kids ate it all! :shock
I discovered I had 2 lil lonesome zucchinis in my fridge that were supposed to make a nice batch of zucchini bread, but instead they were made into this yummy fried goodness! I made this recipe up this evening. It may need a little tweaking, but you get the jist of it. ;)
1 cup yellow corn meal
3/4 cup flour
1 TBSP (give or take a bit) garlic powder- I (L) garlic.
1 tsp Poultry Seasoning
1 tsp Italian Seasoning
salt and pepper to taste ( I used I think about 1.5 tsp salt and 1/4 tsp pepper)
Dash of cayenne pepper ( I would have used more, but my kids were eating it)
2 small green zucchinis
1 beaten egg with a little bit of water.
Canola oil for frying.
I peeled the zucchini and cut it in 1/2 then into thin strips. Mix all dry ingredients together. Heat oil in a large fry pan. Put zucchini strips into dry mix, coat. Then into egg, coat. And then back into dry, coat. Fry until golden and serve with Horseradish sauce. :drool
