Do you want crust and filling recipes or just filling?
My apple pie filling is this:
5-7 apples peeled and sliced or cut in small chunks(I use a mix of granny smith and gala because I like the variance in their textures and flavors)
3/4 cup sugar
2 tsp cinnamon
1 tsp nutmeg
a dash of ground cloves
1 Tbs lemon juice - I leave this out if the granny smiths are very tart
2 Tbs flour
3 Tbs butter cut into small chunks

Mix all but butter together.

Place bottom crust (I make my own and would gladly share the recipe if you want it) in pan.

Pour filling into crust, top with chunks of butter and top crust.

Seal crust, cut vents/decorative holes and bake at 400 for 40-60 minutes.

If your crust becomes too brown before the pie is done use foil around the edges to protect from further browning.

Here's the thing - I do not eat pie. *I* have no personal experience in eating this pie but have received rave reviews and many requests to bring this when we are going somewhere for a pitch-in dinner.

Quick Apple Crisp (pampered chef)

5 Granny Smith apples (about 6 cups)
1/4 cup butter or margarine, melted
1/2 cup nuts, chopped
1 package (9 ounces) yellow cake mix
2 tablespoons sugar
1 tablespoon cinnamon
Vanilla ice cream or thawed, frozen whipped topping (optional)

1. Preheat oven to 350°F. Peel, core and slice apples. Cut apples in half crosswise. Place apples in a deep dish baker.

2. Microwave butter on HIGH 60 seconds or until melted. Chop nuts. Add nuts, cake mix, sugar and cinnamon to bowl; mix until crumbly. Sprinkle mixture evenly over apples.

3. Bake 35-40 minutes or until apples are tender and topping is golden brown. Serve warm with ice cream, or whipped topping, if desired.

Yield: 10 servings or 20 sample servings
