I am making Southwestern Chicken

Southwestern Chicken
4 boneless, skinless chicken breasts
2 jars medium salsa
1 can black beans, drained and rinsed
1 can whole kernel corn (or mexican corn)

Mix corn, beans and one of the jars of salsa in the crock pot.
Place chicken on top and coat with other jar of salsa.
Cook on low for 4-6 hours.
About 10 minutes before you eat, sprinkle with cheese and let melt.

I will cook rice to go with it as well.

chicken thighs with cream of mushroom, cream of chicken, rotel tomatoes and a little chicken broth. I'm going to serve it over rice.

That sounds like something Dh would LOVE!

Nothing in there tonight, but I made chicken stew in it on Sunday.

Pork roast. Period :lol

It was awesome :yes Better than any pork roast I'd ever done in the oven. I just rubbed it with this yummy rub that I have, and tossed it in the crock pot for about 7 hours. It was SOOOO tender and juicy :) I done good!!!!

I found the recipe today and added my own twist... I will let you know how it turns out... I am excited! I like tweaking recipes. The thing that was advertised in the recipe about leftovers is you can shred the leftover chicken and put it in a tortilla... sounds good too don't ya think!? :D

So dinner last night was a success... I have leftovers and mixed with the rice and cubed the last chicken breast. YUMMERS! :D

I will have to try this.... This is ironic - I had a friend from work told me about this same recipe yesterday!!!!

The original recipe was 1 jar of salsa... I used two types and used two jars. It all depends on your tastes... it's great, and I already had leftovers for breakfast! :hehe

Currently dust have been the only thing cooking in my crockpot. :lol

I really want to start finding some good soup and chili recipes though since I love soup/stew in the winter.
