4 oz unsweetened chocolate
2 cups semi-sweet chocolate chips, divided (so each cup separated)
1/3 cup butter
1 cup sugar
3 large eggs
1 1/2 tsp unsweetened cocoa powder
1/4 tsp baking powder
1/4 tsp salt
powdered sugar, for dusting
1. In a large saucepan over low heat, melt the unsweetened chocolate, 1 cup of the choc. chips, vanilla, and butter together; stirring, until smooth. (I melted the chips by itself in microwave, the choc. by itself, and the butter by itself and then put everything together and put it in for about 30 sec, stirred it, and let sit for about 2 min which it thickened to combine and I stirred it again)
2. Cool for about 10 min.
3. In a large bowl, beat the eggs and sugar together for 2 min. w/ an electric mixer on medium speed.
4. Beat in vaniall and chocolate mixture.
5. Combine the flour, cocoa powder, baking powder, and salt; add to the chocolate mixture just until combined.
6. Stir in remaining chocolate chips (not melted)
7. Cover dough and chill for at least 3 hours.
8. Remove about 1 cup of the dough each time; with lightly floured hands, roll into 1 inch balls. (I didn't use flour, I used the powdered sugar now, instead of at the end)
9. Place 2 inches apart on ungreased or parchment paper lined cookie sheets. (I sprayed the cookie sheet w/ PAM spray)
10. Bake in a preheated over at 350 degrees for 10-12 min, or until lightly puffed & set.
11. Let cool compltely & then dust with powdered sugar.
