I am a holiday baking freak, and a cookie queen. Most of the time, you name it, I can do it....

Buttttttttt... there is an exception to this rule, that has gotten the best of me every year. Sugar Cookies.

I try and I try and I try, but even with silicone mats and assorted different recipes, I just CANNOT find one that works right, or get them right at all... they end up :pukey :sadeyes :no :gaah :depressed :grumpy

Do you all have a Sugar Cookie recipe that you LOVE that you would share with me?? :please

2 sticks unsalted butter (room temp)
1 cup granulated sugar
1/2 cup light brown sugar
2 egg yolks
Either big pinch nutmeg and 1 teaspoon finely grated lemon rind OR teaspoon vanilla essence
2 1/2 cups all purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
2 teaspoons water

Preheat oven to 400F

In large mixing bowl, cream butter until soft. Gradually add both sugar and beat until fluffy. Add egg yolks one at a time, beating well after each addition. Stir in nutmeg and lemon rind (or vanilla essence).

Sift together flour, baking powder and salt. Stir the mixture to make a smooth dough. If it seems too dry, add up to 2 teaspoons of water, working it in thoroughly. Form the dough into a ball, wrap it in plastic wrap or aluminium foil, and chill thoroughly for at least an hour.

For 7 inch cookies - measure out 1/3 cup of dough. Form into a ball and roll it in granulated sugar. Place ball on greased baking tray and flatten with bottom of glass pie dish until cookie measures 5 1/2 inches. Bake at centre of oven for 7-8 mins, or until the centres have puffed and fallen and edges are golden.

For 3 inch cookies - measure out dough using tablespoon. Roll into ball and roll in granulated sugar to coat. Place ball on greased baking sheet and flatten to 2 inch diameter. Repeat and bake cookies in oven for 6 mins, or until done as described.

It's a Scandinavian spice. I was thinking in place of the nutmeg. probably would work. :yes
