2 cups finely chopped cooked ham
1/2 cup sliced green onion
1/2 cup finely chopped green pepper or 1 7oz can of chopped green chilies
2 1/2 cups grated cheddar or cojack cheese
8- 7" flour tortillas
4 eggs lightly beaten
2 cups half and half or milk
1 tbsp flour
1/4 tsp salt
1/4 tsp garlic powder
few drops of hot or mild taco sauce
In a bowl combine the ham, onion, and green pepper. Place 1/3 cup of this mixture and 3 tbsp of cheese at one end of a tortilla. Roll up. Repeat. Arrange the tortillas seam-side down in a greased 12 x 8 casserole dish. Combine the eggs, cream, flour, salt, garlic powder and hot sauce. Pour over the tortillas.
Cover and refrigerate several hours or overnight. Remove from the refrigerator 45 minutes before baking. Preheat oven to 350 degrees and bake 45-60 minutes or until set. Sprinkle with the remaining cheese. Bake 3 minutes more or until cheese is melted. Let stand 10 minutes. Garnish with avacado, sour cream and salsa.
