View Full Version : Sausage Egg Muffins

I just made this for dinner. sooo yum.
here is where I got it from and then added/subtracted stuff.

INGREDIENTS

1 pound ground pork sausage
12 eggs, beaten
1/2 (4 ounce) can chopped green chile peppers, drained
1 small onion, chopped
1 teaspoon garlic powder
salt and pepper to taste* I omitted the onion because I don't like onion in my eggs. but used onion powder. and I added cheese cuz I like cheese it's yummy.
DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
In a large bowl, combine eggs, chiles, onion, garlic powder, salt pepper and sausage; mix well. Spoon up to a 1/4 cup of sausage mixture into each prepared muffin cup.( i used about 2 tblsp per tin.) then pour egg over sausage. ( i used a small measuring cup i had to make it all even. :yes)
Bake in preheated oven for 15 to 20 minutes, until egg has set and a toothpick inserted into each 'muffin' comes out clean.

I've made these before! I make up a batch and grab 2 in the morning pop em in the microwave for 30 seconds and I'm out the door to work with a good breakfast. Yum

That sounds really good. I wonder if you can make it with ham or bacon? My DH doesn't like sausage.

I think you could, just whatever fits into the bottom of a muffin tin. :D mmmm ham sounds good.

I was thinking that those would be good to have in the freezer for DH when he is stumbling around at 5 am.

You can mix it up and put whatever veggies or meat you want into it and it turns out fine
