Hey girls,
I'm planning Christmas dinner and everything is squared away with one exception. I want some sort of salad, but I don't know what kind. We're having a traditional "way back in the day" dinner. Duck, Figgy pudding, sweet potato casserole, etc. I don't just want a green salad, but I can't do a fruit salad because DH hates coolwhip. A gelatin salad is OUT OF THE QUESTION :puke:
Any ideas??

My mom ALWAYS made an oriental salad to go with Christmas dinner. This recipe is VERY VERY similar to the one she always made. It goes great with just about anything!
Oriental Salad

Dressing -- make ahead
1 c vegetable oil
½ c sugar
1/3 c white vinegar
2 pkgs Oriental flavored Ramen Noodle seasoning
Salad
1 lb coleslaw mix
1 pkg broccoli slaw (look for it -- it's there)
2 pkgs raw Ramen Noodles -- crushed
1 c roasted sunflower seeds
1 c toasted sliced almonds (in oven 350 degrees)
1 bunch chopped green onions
Directions
Mix together! Watch out: you can burn the almonds in less than 2 minutes. It's a good idea to keep the ingredients separated until just before serving so all the yummy crispy stuff doesn't get soggy.

I make this and it's always a HUGE HUGE hit with just about everyone:
INGREDIENTS:
1 pound bacon
3/4 cup mayonnaise
1/4 cup milk
1 teaspoon garlic powder
1/8 teaspoon ground black pepper
salt to taste
1 head romaine lettuce - rinsed, dried and shredded
2 large tomatoes, chopped
2 cups seasoned croutons

DIRECTIONS:
Place bacon in a large, deep skillet. Cook over medium high heat, turning frequently, until evenly browned. Drain, crumble and set aside.
In a blender or food processor, combine mayonnaise, milk, garlic powder and black pepper. Blend until smooth. Season the dressing with salt.
Combine lettuce, tomatoes, bacon and croutons in a large salad bowl. Toss with dressing, and serve immediately.

Another one that my gramma always makes is this one and it's also a HUGE hit with everyone. Even jason eats it and he is PICKY PICKY!
Just make up a big bowl of mixed greens for the salad, then top with this dressing...
1/4 cup mayonnaise
1 tablespoon prepared mustard
1 tablespoon honey
1/2 tablespoon lemon juice
DIRECTIONS:
In a small bowl, whisk together the mayonnaise, mustard, honey, and lemon juice. Store covered in the refrigerator.

Thank you SO MUCH for the ideas girls. All of those salads look fantastic, now the hard part will be figuring out which one to go with. ;)

I make a really simple macaroni salad and everybody seems to like it.
6 cups cooked macaroni
1 1/2 cup mayo (more or less depending on what you like)
1/2 pound of ham cubed (you can use sandwich ham too)
1 cucumber peeled and cubed
Just mix all that together and that's about it. It's my favorite!
