2 tomatoes (http://www.cooking.com/advice/adgloss.asp?GlossType=ingr&Item=Tomatoes), chopped
1 small onion (http://www.cooking.com/advice/adgloss.asp?GlossType=ingr&Item=Onions), chopped
1 clove garlic (http://www.cooking.com/advice/adgloss.asp?GlossType=ingr&Item=Garlic), peeled
2 1/2 cups water or chicken stock (http://www.cooking.com/advice/adgloss.asp?GlossType=ingr&Item=Stock)
1 teaspoon salt (http://www.cooking.com/advice/adgloss.asp?GlossType=ingr&Item=Salt), or to taste
2 jalapeno (http://www.cooking.com/advice/adgloss.asp?GlossType=ingr&Item=Jalapeno) chiles, chopped

RECIPE METHOD

Heat the oil in a medium saucepan until hot. Add the rice, stirring constantly, until slightly browned, or, as old Mexican cooks like to say, it sounds like tissue being crushed. Strain the rice and return it to the saucepan.

Combine the tomatoes, onion, and garlic in a blender until smooth. Pour the mixture over the rice and cook over medium heat, stirring with a wooden spatula, for about 5 minutes. Add the water and salt, stir, then put the chiles and cilantro on top. Lower the heat, Cover, and simmer for approximately 25 minutes or until the rice is tender but firm.

For a popular variation to this recipe, add 1/3 cup each cubed potatoes, carrots, and peas with the water.

Here..... I cup of rice a drizzle of oil around the pan, brown the rice then pour 1 can (small 8 oz) in pan followed by two cans of water, add you salt and pepper and any other spice you might like, bring to boil, lower temp to low cover and let simmer 10-20 minutes Very important.... DO NOT STIR IT! make sure that the temp is on low so you don't burn the rice. I find it is best to make rice in a skillet rather than a pot for some reason it just taste better.

I can small 8oz what? tomatoe sauce?

Okay mine is really easy and fast and taste good! LOL.

Measure how ever many cups of rice you want
brown the rice with a little bit of oil at the bottom of the pan
add chicken broth (the same amount of cups of rice...I usually add a little bit extra)
add a can of stewed tomatoes...sometimes two if it's a lot of rice..
spice it with some spices
and finally put the lid on and let it cook...

My recipe is very easy, and it's always a hit with DH. I've made it several times.

1C uncooked rice
1 chopped onion (I use sweet)
About a half a green pepper chopped
2C water
1 can diced tomatoes with chiles (Rotelle)
Chili Powder (2t give or take, to taste).

Heat 2T oil in your skillet. Saute the rice, onion and bell pepper until the rice is browned. Stir in the tomatoes and water (don't drain the tomatoes). Add chili powder. Cover and simmer over low/medium heat for about 45 minutes.
