I need a really good but easy corn bread reciepe. I love the stuff from black eye pea but I haven't found a good one.

My DH isn't a really big fan of the ones with chunks of corn in it.

Also, how do you top yours? I always do honey and butter.

I just follow the recipe off the Cornmeal canister. :shrug

But I have to bake it in a cast iron skillet... :yes I think that makes a difference..

Maybe that is what it is. I've used that reciepe but thought there was something better out there.

Me too, But I will add vanilla, cinnamon, and a lil sugar. Top it with butter and in a cast iron pan to bake it.

mmmm corn bread.... i like to eat mine for breakfast, topped with butter in a cereal bowl of milk! i know, i am WEIRD!! :P

I always make it like the box or whatever says and then add however much sugar.. I don't really measure it .. depends on how many boxes I make really, then I put butter on it.

i use the jiffy box corn muffin mix but i don't follow the directions LOL

2 boxes of mix, probably half a cup of sour cream, a splash of milk probably 1/4 or 1/3 of a cup, 2 eggs and a dash of salt. mix, bake at 375 for 15 to 20 minutes. YUM, dh loves it :grin:

oh & btw, i just make the muffins i don't bake it like a "cake/bread" just muffins. best part is, doesn't fall apart & is SUPER moist.

I do too. Jiffy is the best, but any boxed cornbread is pretty good. I like to mix the Jiffy with cake mix. GLORIOUS!

If you just want to make the whole recipe, then use 2 boxes of Jiffy, 1 box of yellow cake mix, about 5 eggs, milk, melted butter and pour into a large pan, preferably 13x9.

A smaller version consists of about 1 box of Jiffy and 1-2 cups of cake mix. You can just save the rest for the next time.

so i am guessing this comes out more like a cake with cornbread taste? could ya put icing on it? cuz that would be great for a potluck thingy i am doin next weds. its kind of a corn theme :teehee

Baking it in a cast iron skillet or stoneware is the best way to go!! It keeps it more moist and makes a nice golden crust instead of the darker brown to black crust that you get from a metal baking pan! :) :thumbsup

I have an OLD OLD OLD OLD OLD cast iron skillet that was handed down from my Memaw! It's PERFECTLY seasoned and makes the BEST cornbread!!!! :)

I always use the martha white packaged stuff.. it's the easiest... we like the mexican style cornbread as well!

Also... if your DH doesn't like the chunks of corn in the cornbread try using creamed corn instead of whole kernel!!! :)

Smokey Bones used to have this phenomenal cornbread with the most amazing pecan butter. The restaurant has changed ownership/management so their food offerings aren't as good as they used to be, but I did manage to find and keep these recipes:

Smokey Bones Pecan Butter

1/2 cup pecans
1 pound of unsalted butter, softened
1/4 cup clover honey

Preheat oven to 350 degrees F.

Place pecans on a baking tray and place in oven approximately 5 to 8 minutes or until pecans are toasted. Remove from oven and let cool to room temperature. Chop the cooled pecans.

Place pecans and butter in a mixer bowl and blend 3 to 5 minutes using spatula to scrape sides.

Turn mixer speed to low and add honey; continue mixing until all ingredients are well combined.

Place in serving dish or bowl and refrigerate until ready for use.

Amusement Park Cornbread Recipe
This is a sweet cornbread similar to Smokey Bones cornbread. It is really light and is wonderful with honey butter!

8 servings
30 min 10 min prep
2/3 cup white sugar
1 teaspoon salt
1/3 cup butter, softened
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1 tablespoon baking powder
3/4 cup cornmeal
1 1/3 cups milk

1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8 inch iron skillet.
2. In a large bowl, beat together sugar, salt, butter and vanilla until creamy. Stir in eggs one at a time, beating well after each addition. In a separate bowl, mix together flour, baking powder and cornmeal. Stir flour mixutre into egg mixture alternately with the milk. Beat well untill blended.
3. Bake in preheated oven for 20 minutes, or until golden brown. Serve warm with pecan butter.

It depends on how much cake mix you use. I actually stumbled upon it while I was developing a recipe using Martha White cornbread mix. I used one box of cake mix, 2 boxes of cornbread, and I added a couple of cups of frozen blueberries, and poured it into a bundt pan. When it was finished cooling, I iced it with an orange vanilla glaze.
My DH loved it.
