My favorite dinner for a hot day is a steak salad (Pa style).

Sometimes we have sandwiches or rummage through left overs.

Ok here goes LOL

Place a bed of lettuce on a HUGE plate
Top with chopped veggies, banana peppers and black olives (if you like)
sprinkle mozzarella cheese
then place HOT pieces of steak
more cheese
french fries
more cheese
and top with Ranch (or any type of dressing)

Finish off with an hour workout cause these salads are anything but fat free. :lol

I use the microwave to warm things, the stove top, or eat stuff that doesn't have to be cooked. If I have something that needs to be made that goes in the oven and it is really hot out then I bake it in the early morning or wait til late and night. We'll just pop it in the microwave when we want to eat it.

Tonight it is veggie stir-fry.

I wake up and do all that before it is hot out and then let it cool the rest of the day in the fridge. It is served cold so it is nice and refreshing to eat. SOmetimes I sub pepperoni for the chicken and eat it that way

Besides doing more salads or cold type meals, cooking early AM, BBQing, or more stove top cooking, I also use my crock pot more often.
