2 cups self-rising flour
1 teaspoon baking powder
1 teaspoon sugar
1/3 cup shortening (Crisco preferred)
3/4 cup grated cheddar cheese (I always prefer sharp, and hand-grated)
1 cup buttermilk
1. Preheat oven to 350. Grease or spray a baking sheet well with cooking spray.
2. Combine the flour, baking powder and sugar.
3. Using a fork, cut the shortening into the flour mixture until it resembles cornmeal.
4. Add the cheese.
5. Stir in the buttermilk all at once, until just blended. Do not over-stir.
6. Drop by tablespoonsful (or Paula and I ;) recommend using an ice cream scoop for nice large biscuits), onto the greased baking sheet.
7. Bake 12-15 minutes.
8. Brush with melted butter as they come out of the oven - yum!
