Breaded Baked Cod with Tartar Sauce

Fresh cod and homemade tartar sauce: delicious, and a big step up from fishsticks.

INGREDIENTS

Tartar Sauce:
1/2 cup reduced-fat mayonnaise
1 1/2 tablespoons lemon juice
1 tablespoon finely chopped dill or sweet pickles
2 teaspoons mustard
2 teaspoons capers, drained and chopped
2 teaspoons chopped parsley (optional)

Fish:
2 slices whole-wheat bread, torn
2 eggs
1 tablespoon water
1 1/4 pounds cod or scrod fillet, cut into 1 - 1 1/2" pieces
1/2 teaspoon salt
1/4 teaspoon ground black pepper


DIRECTIONS
To make the tartar sauce: In a small bowl, combine the mayonnaise, lemon juice, pickles, mustard, capers, and parsley (if using). Cover and refrigerate.

To make the fish: Preheat the oven to 400 degrees F. Coat a baking sheet with cooking spray.

Place the bread in a food processor and process into fine crumbs.

Place in a shallow bowl. In another bowl, beat the eggs with the water. Season the fish with the salt and pepper. Dip into the eggs, then into the bread crumbs. Place on the prepared baking sheet and generously coat the breaded fish with cooking spray.

Bake until opaque inside, 10 minutes. Serve with the tartar sauce.

Makes 4 servings
