Easy Tuna Casserole

Prep Time:15 Minutes
Cook Time:30 Minutes
Ready In:45 Minutes
Servings:8

INGREDIENTS:
3 cups cooked macaroni
1 (6 ounce) can tuna, drained
1 (10.75 ounce) can condensed cream of chicken soup
1 cup shredded Cheddar cheese
1 1/2 cups French fried onions

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a 9x13-inch baking dish, combine the macaroni, tuna, and soup. Mix well, and then top with cheese.
Bake at 350 degrees F (175 degrees C) for about 25 minutes, or until bubbly. Sprinkle with fried onions, and bake for another 5 minutes. Serve hot.

I had this the other night. It was SO yummy. I also added a 8 oz of sour cream to it.

I love tuna casserole.. But here in Minnesota we call casserole "hotdish"..

Tuna hotdish reminds of someone that I used to know. 7 years ago I lived in a tiny downtown apartment in Brainerd above the Iron Rail Saloon. The guy across the hall was named Dave, he was a bacholer, lived by himself..

He got diagnosed with terminal pancreotic cancer. He looooved tuna hotdish, and when I would make it, I would always make sure that I went across the hall and brought him a plate.

Even though he was going through chemo, he always made sure that he ate a couple bites in front of me so he could tell me how good it was.. I was always so worried about him, he lost so much weight so quickly... It made me feel like I was really doing something good and helpful to bring him a meal. He probably just threw it up after I left, but he managed to choke it down.

One of his friends came up to me after the funeral, and thanked me for being kind to his buddy, Dave. He told me that Dave told him how the neighbor girl would make him dinner while he was sick...

Everytime someone mentions tuna hotdish, I think of Dave.. I just realized that I've never told anyone, ever, about that...

Thanks for posting the recipe. I mean it, thanks for that.. I haven't thought about Dave in a while..

I made this two nights ago with a few small changes and it turned out pretty good! We like a ton of flavor so I used the big can of tuna (12 oz size) instead of the small one, I added garlic powder, onion powder and a little extra cream of chicken, then mixed in some of the fried onions before baking, then topped with them, as well. It had a lot of flavor and I'll probably make it again sometime! :yes
