Prep Time: 25 min | Cook Time: 50-55 Mins | Servings: 8 (yeah right)

Ingredients:

24 uncooked jumbo pasta shells
1 lb lean (at least 80%) ground beef
1 jar (26 oz) chunky pasta sauce
1/4 cup of water
1 container (8 oz) chive and onion cream cheese
1 1/2 cups shredded Italian cheese blend
1/2 cup grated Parmesan cheese
1 egg
1 to 2 tbl chopped parsley (if desired)

Directions:

1. Heat oven to 350F. Cook and drain pasta shells as directed. (For best results, cook the pasta just until al dente (still slightly firm). This will make them easier to stuff and they won't overcook.)

2. In 10-inch skillet, cook ground beef for 5 to 7 minutes, until thoroughly cooked; drain. Cool slightly, about 5 minutes.

3. In large bowl, mix pasta sauce and water. Pour 1 cup of the sauce in the buttom of an ungreased 13x9 glass baking dish. In a medium bowl, mix cheese spread, 1 cup of the Italian cheese, the Parmesan cheese, egg and cooked ground beef. Spoon a heaping tablespoon of the mixture into each shell. Arrange shells over sauce in baking dish. Pour remaining sauce over shells. Cover with foil.

4. Bake 40 to 45 minutes or until bubbly and cheese filling is set. Sprinkle with remaining Italian cheese. Bake 10 minutes longer, or until cheese is melted. Sprinkle with parlsey for presentation.

Help! For the grated parmesan do you use the freshly grated stuff found in the refrigerated section or the stuff that you put on top of your spaghetti that is usually found by the spaghetti sauce and stuff? I'm going to try to make this for one of the moms in my playgroup that just had a baby.. it is my night to take her a dinner!

TIA,
Teresa

hey britt that sounds so good. i want to try it but i need to ask you is that 490 calories for the whole thing or a serving? my hubby probably wont be able to eat it since he is going back on his low carb diet but if that was 490 cals for the whole thing how many servings does it make? i guess i could always use the reduced fat versions too.

Unfortunately, it's 490 per serving, each serving is 3 stuffed shells.

But you could have a big salad in addition to it and still be well within the 600 calorie per meal.
