Here's a yummy fall dinner, that's so easy....thanks to the crock pot :) Made it tonight, actually.:hehe And it's another one that the kids always eat.
1.5-2 lb. boneless pork loin
4 potatoes, peeled and quartered
2 c. baby carrots or regular carrots cut into 1 inch chunks
1 medium size onion cut into 6-8 pieces
1 c. apple juice
2 envelopes pork gravy mix
1 c. water
Place all the cut up vegetables in the bottom of the crock pot. Salt and pepper. Place the pork roast on top of the veggies. Salt and pepper the roast. Pour 1 cup of apple juice over the top.
Cook on low for 6-8 hours. I check the temperature (170 degrees) of the roast after 6 hours, and it is usually done. For a 3-4 lb. roast, it takes closer to the full 8 hours.
Remove roast and veggies from crock pot and keep warm in a 200 degree oven. (I spoon a small amount of drippings over the roast to keep from drying out in oven.) In small saucepan, mix 2 envelopes gravy mix with one cup of water. Add approximately 1 cup of juices from the crock pot to the saucepan. Bring to a boil and simmer for appx. 10 minutes.
Serve roast and veggies with gravy. My kids like applesauce with this, too. This recipe is YUMMY!! :hungry
