I made this last night and it's YUMMY!!!:hungry I used mexican blend cheese instead of the monterrey jack, and sauteed onions with the ground beef. I'm having the leftovers for lunch today...
Beefy Nacho Casserole
1lb. ground beef
1 Tbsp. Chili Powder
1 jar (16oz.) picante sauce
1 (11oz.) can Mexicorn
1/2 cup sour cream
10 corn tortillas
2 cups shredded monterrey jack cheese
Preheat oven to 350. In a large skillet, brown ground beef with chili powder until no longer pink. Drain off excess fat. Stir in salsa, drained corn, and sour cream. Cut tortillas in quarters and soak in a small bowl of cool tap water for 1-2 minutes. Grease and 8x8 in baking dish or 2qt. casserole. Layer 1/3 of tortillas into the dish, then spoon 1/3 of the meat mixture and 1/3 of the cheese. Repeat layers, ending with cheese. Cover with foil and bake for 30 minutes.
Yields 6 servings.
