Ingredients:
2t olive oil
1onion, chopped (sweet was great!)
2 garlic cloves, minced (we used 3 or 4)
2C chopped cooked chicken
1 (10 oz) can mild enchilada sauce
1t dried oregano
4 (6-inch) corn tortillas, halved
1/2 C Shredded reduced-fat pepperjack cheese
Method:
1) Preheat oven to 375. Spray 8x8 pan w/ nonstick spray.
2) Heat the oil in a large nonstick skillet over medium-high heat. Add the onion and garlic; cook, stirring frequently, until lightly browned, about 5 minutes. Add the chicken, enchilada sauce, and oregano; bring to a simmer (bring to a simmer? I swear that's what it says :giggle). Remove the skillet from the heat.
3) Place 4 of the tortilla halves in an overlapping layer in the bottom of the dish. Spoon half of the chicken mixture on top and sprinkle with 1/4C of the cheese. Repeat the layer once more.
4) Cover the dish tightly with foil and bake about 15 minutes. Remove the foil and bake until heated through and the cheese is melted, about 5 minutes (longer doesn't hurt, DH was on the phone and I ended up giving it 25 ;) ). . Let stand about 5 minutes, then cut into 4 portions and serve at once (or within 20 minutes :rofl)

We topped ours w/ a little bit of sour cream and it tasted GRRRREAT!!! :)
