View Full Version : Key Lime Pie

Crust
I just use the already made graham cracker crust you can buy at any grocery store
Filling
5 egg yolks
1 can of sweetened condensed milk (I use fat free condensed milk and it doesn't taste any different)
2/3 cup of key lime juice
First I put the egg yolks in a bowl and mix it well. Then I pour in the condensed milk while I am mixing the yolks. Beat for about a minute or two, until the air bubbles are gone. Then pour in the key lime juice while the mixer is still going. Mix for another 2 minutes. Make sure a majority of the air bubbles are gone. Then pour filling into pie crust. Bake at 325 for 15 minutes. Cool for 1 hour, and then put it in the refrigerator for 3 hours. Serve with whip cream or just by itself :drool
yummy yummy thank you for posting that. do you use the bottled lime juice ? cause this sounds so easy to do.

I use bottled key lime juice. I always have to special order it from Florida, since they don't carry it up here.

SIMMYBABEZ 10-06-2006, 09:30 PM is key lime juice different to limes?! Like is it really different to the point it MAY be in Australia- cos that pic looked so good and im willing to try anything to make that pie tonite!! Btw- never made pie before :P but i have a pie dish!!!
Sarah 10-06-2006, 09:42 PM Key Limes are much different than a regular lime. Key limes are much smaller and they aren't as bitter as a regular lime. There is definetly a difference.

I will second that....:giggle I squeezed them for a pie back when my brother visited in March...WOW:wow ..thats all I am gonna say!!!:giggle It was yummy though...I use that same recipe btw, been passed down from my Granny to all of us grandkids

And I must be such a good sister to do that for my brother:mumble :yes ...took me like 1/2 an hour...but it was still better than searching our backwards grocery store for the juice!!:giggle
