This is one of my husband's fav appetizers at the olive garden... I had to buy the recipe but I swiched it around a bit so it tastes better! He actually loves my version now when we go to the restaurant he brags about it...
1 cup diced artichoke hearts (not marinated, the canned ones work best)
1/2 cup frozen chopped spinach (thawed)
8 ounces cream cheese
1/2 cup grated parmesan cheese
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1/8 teaspoon garlic powder (add more if u really like garlic)
dash ground pepper
1.Put the artichoke & spinach in a microwable safe bowl and cover it with plastic wrap. cut slit on top to let it steam out , microwave on high for 4 mins. stir and put it back in for anothe 2-3 mins until artichoke is tender.
2.Heat the cream cheese on another bowl on high for 1 min.
3.Add the spinach & artichoke to the cream cheese and stir well.
4.Add the remainder of the ingredients to the mix and combine well...
Serve warm with crackers or toast, You can also bake it for 20 mins at 350 degrees, bubbly hot that way...sprinkle chopped roma tomatoes on top taste sweet...
You can add or take away ingredients as you like I happen to like it this way...
