New wife here and raised by my dad... Is there anyone who can give me some help on how to make homemade biscuits and gravy.. I use to eat it when I was little and I haven't had it in forever.. I don't even know where to start... And any other really good easy recipes for a dummy like me.. My DH will be coming home soon and I only know how to make some basics and box stuff but I want to be able to feed my man... I know hes going to be hungry... Ship food sucks !!!

There are two kinds of biscuits I make, one is the old fashioned ones my grandmother taught me. Now she used lard then crisco which I changed to butter. Then there is the layered butter biscuits that are a lot like hungry jack brand.

Biscuits
2 cups all-purpose four
3 tsp. baking powder
1 tsp. salt
1/4 cup butter
3/4 cup milk

Directions:
Heat oven to 450 degrees. Measure flour, baking powder & salt into a bowl - mix together. Cut in butter with a pastry blender or fork until thoroughly incorporated. Stir in milk and lightly mix with fork just until you get a soft pliable dough. DO NOT over mix or you will have tough biscuits!!! Place dough on floured board and shape lightly to about 1/2 " thickness. Cut with a floured biscuit cutter. Place on ungreased cookie sheet. Bake 10-12 minutes. Makes about 12 biscuits.

Ingredients
4 1/2 cups flour
1/4 cup baking powder
1/4 cup sugar
3/4 lb margarine
1/4 lb butter
1 1/2 cups buttermilk
Instructions
In metal mixing bowl add flower, baking powder and sugar. Blend with wire whisk.


Cut margarine and butter into small cubes about 1/2 inch thick.

Using a pastry cutter or a fork combine butter and margarine with dry ingredients until
mixture is mealy.

Add buttermilk and mix into a dough. Do not over mix, there should be visible pieces of
butter and margarine, that is what makes these biscuits flaky.

Flour a work space and roll dough out to 3/4 inch thick, fold and roll again. Repeat this
process two to three times until you have a smooth dough. The dough will be speckled with
butter and margarine. Cut into rounds, whichever size you prefer. I suggests two
inches in diameter.

Bake at 375 degrees for 10 to 20 minutes or until golden brown.

Makes two dozen large or three dozen small biscuits.


Gravy

5 tablespoons meat drippings
4 tablespoons flour
2 cups milk
1 teaspoon salt
pepper to taste

Before I ever start to make gravy I measure everything out and I stir the salt and pepper into the milk, make sure it is cold when you pour it in for best results.
Over medium heat pour flour into the drippings and stir till smooth. You want to cook it a few minutes to take out that raw flour taste. The longer you cook it the deeper the color and taste. Cook it at least a minute or two.
While stirring continuousy pour the milk in. After combining it, turn heat up to medium high and stir continuously until it bubbles. If you like it a lttle thinner use 1 tablespoon less flour. But this is the consistency we liked it growing up.
If you want pieces of sausage in it then crumble a little cooked sausage into it.

Bonus gravy: We begged my mamaw as kids to make it, my daughter begged me to make it and now my grandkids beg me for it.

Chocolate gravy

1 cup sugar
1/3 cup ocoa
3 tablespoons flour
1/2 teaspoon salt
2 cups milk
1 teaspoon vanilla
1/2 stick butter

In a bowl stir up flour, sugar, salt and cocoa, then dump it with the milk and butter into a skillet. Cook this on medium heat till it bubbles and then add the vanilla. Serve over buttered biscuits.

This is one great treat!!!

mmm i love biscuits and gravy! we just make it with store bought biscuits(in the little can thing) and a little packet of gravy mix. lol. but now im gonna steal this and try to make it myself. lol mmmm maybe ill try it tomorrow morning. now it sounds hella good! Thanks! :)
