Here Brandi, I thought of you and Jason I was making these! WOW! They are actually very good!! :pig :drool :hungry
Vegetable oil cooking spray
1/4 c wheat or oat bran
1 1/2 c plus 2 T soy flour
3/4 c finely diced baked ham (bacon)
1/2 c shredded sharp Cheddar cheese
3 eggs
3/4 c heavy cream
1/2 c club soda
1/3 c Splenda
1 1/2t baking powder
Preheat oven 375
Grease 12-cup muffine tin with cooking spray In a small bowl, mix together the bran and 2 T soy flour. Sprinkle the mixture evenly over each cup of the muffin pan.
In large bowl, whisk together all remaining ingredients until completely blended Fill each muffin cupabout 2/3 full bake 20-25 mins check doneness with toothpick in center. Don't overbake.
Let muffins cool in tin for 5 minutes before removing from tin. Serve warm or room temperature with butter or cream cheese.
