From my dh's other grandma. She is full blooded Cherokee, and has some wonderful family recipes. Unfortunately she doesnt live real close, so we dont see her often. She lives on the reservation in NC. This pudding is awesome!
6 tablespoons corn meal 1 teaspoon baking soda
1 quart milk 1 tablespoon Ginger
1/2 pint cold water 1/2 teaspoon cinnamon
1/2 cup suet chopped 1/2 teaspoon nutmeg
3 tablespoons brown sugar 4 eggs
1 cup molasses
Boil the milk, put cold water in teh meal to get it wet. Pour meal into boiling milk along with the salt and suet. Boil for a quarter hour and keep stirring. If a skin forms on top remove it.
Then add 1/2 cup cold milk, sugar and stir baking soda into molasses and then add to mixture. Add spices, beat in the yolks. Take the egg whites, beat them seperately until they are stiff, add to mixture. Grease or butter your pan. Pour into pan and bake for an hour. Let cool; and serve.
