View Full Version : Rosemary pork roast and potatoes

This is a crock pot meal, and takes about 9 hrs to cook in the crock pot. One of those throw it all in and leave for work meals.


Ingredients:
1 lb red potatoes cut into 1/4ths
1 cup baby cut carrots
3 pound boneless pork loin roast
3 tablespoons dijion mustard
2 tablespoons chopped rosemary leaves *fresh or dried*
1 teaspoon chopped thyme leaves *fresh or dried*
1 teaspoon salt
1/2 teaspoon pepper
1 small onion, finely chopped
1 1/2 cups beef broth

Arrange potatoes and carrots around the outer edge of crock pot. Place roast in center of pot. Mix mustard rosemary thyme salt and pepper in a small bowl. Spread evenly over roast. Sprinkle onions over roast. Pour broth evenly over pork and veggies.

Cover and set cooker on low for 8-9 hrs.

Come home from work, and enjoy!
