Okay, here is my recipe...but I am warning you..I cheat :lmao
McCormick makes a seasoning mix called White Chicken Chili...I use this
1pkg of seasing
1tbs of oil
1lb of skinless chicken breast
1c of water
1 can of white beans undrained (I use great northern beans)
1 can of whole kernal corn (optional)
I also add 1 can of chunky diced tomatoes..you can add fresh, it taste good either way
2 ways to make this..fast and slow :giggle
Fast:
1)Heat oil in large skillet, add chicken and cook until no longer pink
2)Stir in seasoning, water, beans and tomatoes.
3)Bring to boil:cover
4)Reduce heat and simmer 10 min, stir occasionally
5)Serve with shredded cheese, sour cream or guacamolie dip
Slow:
Crock Pot
Put all ingredients into crock pot, Low: 8-10 hours High: 6-8
Serve with cheese... :hungry
When using crock-pot I do not cook chicken.I put it in the pot still frozen and about 4 hours later pull it out and chop it up, put it back into pot. ( I also use 2lbs of chicken breast, it makes it more hearty)
I always use the crock-pot to make this chili. It is simple, fast and is a great alternative to reg. chili. This is even great served cold with sour cream :hungry
It is spicy, so children may not like it..my 7 year old doesnt..but my 10 year old nephew LOVES it..so I guess it depends on the taste buds
