i have this church thingy on weds. night and i signed up for red beans and rice. i have never made it but it sounded simple enough! i was wondering if anyone had a good simple red beans and rice recipe? :hungry

Here is a crock pot one I have used in the past (got it off Recipes.com) or you could just grab a few packages of Zatarans.

1 ham bone, cracked
1 pound small dried red beans, soaked overnight and drained
1 cup chopped onion
3 cloves garlic, minced
salt and pepper, to taste
6 cups hot cooked rice
1 cup chopped green onions

In crockpot, combine beans with ham bone, onion, garlic, and 1 1/2 quarts water. Cover and cook on high 2 hours. Turn heat to low and cook, covered, 10 to 12 hours. Remove ham bone and mash some of the beans against the side of the pot to thicken the remaining liquid. Remove meat from bone and return meat to pot. Season with salt and pepper and serve with rice, topped with chopped green onions.
Serves 8 to 10.

or you can go to the commissary and get that box of Zatarans and make maybe 3 boxes for a large crowd they have red beans and rice and its good.

I make red beans and rice this way....

Sliced sausage (whatever type that has a small kick to it)
two cans of kidney beans with juice
onion
pepper
salt
garlic
cajion season

Just mix together and cook slow for a couple hours if possible. Serve over rice. The longer you cook it, the better it is. Just like chilli.
