Okay ladies-
Ive decided that in my next 8 months or so without him I need to bone up on a few skills so I am semi domesticated for when he comes home.
Any ideas on fairly simple recipes that dont have 20 million ingredients or steps? Im good with about 8-10 of either but beyond that, it looses my interest.
any ideas? anyone?
I'm a fan of casseroles and other one dish meals. I almost always use recipezaar.com to find new dishes to try. Sometimes I browse their message board too when I can't think of anything specific to search. I know I'm not much help, but that's all I've got!
I like cooking, but I prefer simple meals also!

Here is the first dish my son made (He was 8 yrs old)
Pesto Chicken, serves 4
4 boneless chicken breasts
1 Jar of Pesto
1 Can Petite diced tomatoes drained
Salt, pepper and fresh garlic to taste
In a glass pan coated with olive oil place chicken breasts, layer the pesto and on top of that layer the tomatoes, season to taste.
Bake at 350 for 30 or until done.
Serve with linguini and parmegiano reggiano cheese.
Salsa beans with chicken (same concept)
4 boneless chicken breasts
1 or 2 cans of pinto beans
1 jar of your favorite salsa
cumin powder, and paprika to taste
Place chicken in oiled pan, season with cumin and paprika, add beans and salsa, bake at 350 for 35 minutes, serve over white rice and top with a mexican blend cheese.

that sounds good. If an 8 year old can master it, I think I can do half as good.:giggle

Baked Spaghetti
INGREDIENTS
1 (16 ounce) package spaghetti
2 cups shredded mozzarella cheese, divided
3/4 cup grated Parmesan cheese
1/2 cup grated Romano cheese
3 eggs, beaten
1 tablespoon olive or vegetable oil
2 teaspoons garlic powder
salt and pepper to taste
1 (28 ounce) jar spaghetti sauce
DIRECTIONS
Cook spaghetti according to package directions; drain. Add 1 cup mozzarella cheese, Parmesan, Romano, eggs, oil, garlic powder, salt and pepper. Press into a greased 13-in. x 9-in. x 2-in. baking dish. Top with spaghetti sauce. Cover and bake at 350 degrees F for 20 minutes. Uncover; sprinkle with the remaining mozzarella. Bake 10 minutes longer or until heated through and cheese is melted.
