Ingredients
6 chicken breast halves NOT BONELESS/SKINLESS
1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/2 cup grated romano cheese
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon lemon pepper
2 tablespoons butter, melted
Seperate skin from meat along the rib edge, for stuffing, combine cheeses, basil oregano and lemon pepper seasoning in a bowl, spoon a rounded tablesppon of stuffing between the skin and the meat of each breast. Place chicken bone side down ina rectangular baking dish, brush chicken with butter bake at 370 for 40-45 minutes, or until chicken is no longer pink.
