I had to leave work early today because Erik got sick, and I had to take a long lunch to pick up Bill since his keys were gone. I really want to make a yummy breakfast casserole for everyone in the office to show my appreciation to them for being so understanding. (Im the only one there with kids). So you tell me, what is the yummiest breakfast casserole you've made? Thanks for any help you guys can give

Baked Apple French Toast Casserole recipe
Makes 8 servings.

3 large green apples
1 stick (1/2 cup) butter
1/2 cup brown sugar
12 ounces cream cheese
12 slices firm bread, any flavor
8 eggs
1 quart milk
2 tablespoons vanilla
Cinnamon to taste

Set rack in lower third of oven and preheat to 350 degrees F. Butter a 13 x 9-inch baking pan.

Core and cut the apples into thin wedges, leaving the skin on.

In a skillet, melt the butter with brown sugar and 1 tablespoon water. Add the apples and cook stirring for two to three minutes. Transfer to the baking dish and let cool.

Cut the cream cheese into cubes and arrange evenly over the apples. Cut the slices of bread in half diagonally and layer over the apples to cover the whole dish.

In a large mixing bowl, beat together eggs, milk and vanilla extract. Pour the egg mixture over the bread, taking care to dampen all of the bread. Sprinkle with cinnamon.

Bake for 40 to 50 minutes, until golden and puffed. Let cool 10 minutes before serving.

I usually do pepper bacon cooked and chut into pieces, hashbrown potatoes or cut up diced potatoes cooked, 4 or 5 eggs, and some shredded cheese. Bake it on 350 until eggs are done and cheese is melted

Sausage and egg casserole
1 lb. Owen's sausage
2/3 cup milk
grated cheddar cheese
green onion
1 doz. eggs
1 can cream of mushroom soup
fresh mushrooms
seasoning salt (to taste)

Brown sausage in skillet, drain and crumble. Spread evenly in bottom of a large pyrex dish. Beat 1 dozen eggs with 1/3 cup milk, season with seasoning salt. Soft scramble, cool and pour over sausage. Saute diced fresh mushrooms in butter and add green onion tops. Spread over eggs. Mix 1 can cream of mushroom soup with 1/3 cup milk and pour over top. Sprinkle grated cheddar cheese generously over top and bake 30-40 mins @350 until it bubbles.

Sourdough bread
5 eggs, beaten
1/4 cup evaporated milk
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded mild Cheddar cheese

Directions:

Spray casserole dish with a non-stick cooking spray. Trim crusts from bread, cut slices and place bread on the bottom of casserole dish. Beat eggs, add salt, pepper, evaporated milkand mix until completely. Pour egg mixture over bread. Sprinkle diced ham over egg mixture and cover. Place casserole in refrigerator overnight or in refrigerator for at least five hours.

Remove casserole from the refrigerator, sprinkle cheese on to the top of eggs. Carefully spread the cheese on top of egg mixture. Place casserole in a preheated 375F. oven for 20 - 22 minutes depending on the depth of the casserole dish.

Spanish Egg Breakfast Casserole


10-12 Eggs
1/2 cup Flour
1 teaspoon Baking powder
1/2 Stick margarine
2 small Cans chopped green chiles
1 pint Cottage cheese
1 pound Cheddar cheese -- grated
1 pound Sausage -- cooked & crumbled

Mix all ingredients together.
Pour into a greased 9- x 13-inch baking pan.
Bake 15 minutes at 400 degrees.
Reduce heat to 350 degrees for 35 minutes.
Cut into squares to serve.
Leftovers are good heated in the microwave. Serv

This is my DH's favorite

1 dozen eggs
1 pckg of shredded cheddar cheese
1 package of sausage
5 biscuits
1 package of frozen broccoli

cook all of the ingredients like the package's say. Pour each ingredient one at a time in a baking dish( except for the biscuits), mixing each layer into each other. Put biscuits on top and serve.

That made me laugh out loud!!

I ended up making a casserole using filipino sausage (longonisa) with eggs, milk, cheese, mushrooms, cream of mushroom soup, all baked together. It was very good :drool

Thanks guys for all the recipes, I'm going to start doing this weekly, so I'll try one of these next week!
